We should receive our 1st shipment of bottles by Friday.
I went into the printers yesterday to view the product. The guy I am working with was very nice, gave me sample paper to cut and play with so I get the correct dimensions for the label.
Hopefully we can get our first bottles filled by Monday! Maybe we can even get them into your hands by Tuesday.

Port Charles Reduction Sauce

Welcome to our family's creation. We are starting to bottle our family's secret sauce. It is perfect for any meal as a dipping sauce or marinade for meat. Port Charles came to life through the brilliance of my dad who has had years of cooking experience.

I am on a journey. I have never done this before and I have no idea what I am doing. We are starting with a product and a name but that is it!

All ideas are welcome!

A special thanks to Bethany for creating our first logo/label! If you are in need of anything creative she is your gal!

Testing Bottles

The first step in this process is deciding which bottles I am going to use. I just ordered a shipment of 20 of these bottles. I am trying to see if it is the size we will need. Then I will try to print up some labels and test the product with the local grocers. I am trying a farm here who has a store (Shady Brook Farms) and McCaffrey's Supermarket which is a gourmet type grocery store. I will present the product and hopefully see if they are interested in it and then order more bottles.

I am almost done making my 1st batch. I am trying to see what my recipe will fill. Hopefully I can get at least 3 5oz bottles. That would be good!

The kids and I just sat down to dinner. I grilled some steaks, heated up some Port Charles, and 'carefully' dipped a piece of steak in. One taste, and a mere dip was not enough. I went back to the saucepan, poured a gluttonous amount over the filet, sat back down, and dove right in. I asked Katie to try it. (Katie likes her steak naked, nothing on it except grill marks), and with some encouragement she took a dip. Her eyes widened, as she inquired to what it was. Mac, who only likes A1 sauce with this steak, gave it a thumbs up and a nod (which I interpret as a compliment from my familiarity with teen linguistics).
I'm addicted! I will be buying more off the website, telling all my friends, and promoting it here in the Boston area.

Our family plans on donating proceeds of our product to the Down Syndrome Research and Treatment Foundation (DSRTF).

"The mission of DSRTF is to stimulate biomedical research that will accelerate the development of treatments to significantly improve cognition for individuals with Down syndrome."

A nice way for you to get involved is through DSRTF's Adopt a Mouse program. For a small amount of money you can make a difference.

Here is some facts about Down Syndrome from the National Down Syndrome Society:

Down syndrome occurs when an individual has three, rather than two, copies of the 21st chromosome. This additional genetic material alters the course of development and causes the characteristics associated with Down syndrome.

Down syndrome is the most commonly occurring chromosomal condition. One in every 733 babies is born with Down syndrome.

There are more than 400,000 people living with Down syndrome in the United States.

Down syndrome occurs in people of all races and economic levels.

The incidence of births of children with Down syndrome increases with the age of the mother. But due to higher fertility rates in younger women, 80 percent of children with Down syndrome are born to women under 35 years of age.

People with Down syndrome have an increased risk for certain medical conditions such as congenital heart defects, respiratory and hearing problems, Alzheimer's disease, childhood leukemia, and thyroid conditions. Many of these conditions are now treatable, so most people with Down syndrome lead healthy lives.

A few of the common physical traits of Down syndrome are low muscle tone, small stature, an upward slant to the eyes, and a single deep crease across the center of the palm. Every person with Down syndrome is a unique individual and may possess these characteristics to different degrees or not at all.

Life expectancy for people with Down syndrome has increased dramatically in recent decades - from 25 in 1983 to 60 today.

People with Down syndrome attend school, work, participate in decisions that affect them, and contribute to society in many wonderful ways.

All people with Down syndrome experience cognitive delays, but the effect is usually mild to moderate and is not indicative of the many strengths and talents that each individual possesses.

Quality educational programs, a stimulating home environment, good health care, and positive support from family, friends and the community enable people with Down syndrome to develop their full potential and lead fulfilling lives.

Researchers are making great strides in identifying the genes on Chromosome 21 that cause the characteristics of Down syndrome. Many feel strongly that it will be possible to improve, correct or prevent many of the problems associated with Down syndrome in the future.

Sandy and Charlie Wilson
Charlie and Sandy married in June of 1984. Charlie was a graduate of Archbishop Ryan H.S. class of 1971 located in Northeast Philadelphia. He attended Bucks County Community College in Newtown Pennsylvania and graduated with an Associates Degree in Hotel Restaurant Management. With many off and on jobs in the industry he started up in the landscaping business and for the past 25 years has successfully operated Wilson Landscaping located here in Yardley, Pa. His wife Sandy a 1973 graduate of Council Rock High School in Newtown Bucks County has supported his efforts and also has successfully worked in Educational Sales for the past 20 years. Charlie and Sandy are very proud of their two daughters Jamie Remmey and Stephanie Bissol.They get much enjoyment from there grandchildren Joey, Megan and Olivia and have lots of continuing summer memories of SeaIsle City N.J.

They have 3 beautiful children who are their inspiration for everything they do. They both attended Conwell Egan Catholic High School (96') and Penn State University (00'). Stephanie is currently a Stay at home mom to Joey, Megan and Olivia. Joe currently is employed as a Senior Software Architect at an insurance company. Their activities include watching their children participate in athletics, bettering their community and vacationing at the Jersey shore.

Jamie Remmey
She is a graduate of Temple University and currently works as an admissions representative at ITT Tech. She is engaged to be married and plans to wed in June 2010. Jamie also runs her own business, "Aunt Meme's" where she caters and does children's theme parties. Jamie has a long list of theater work to include in her resume. She has been singing since she was in elementary school. Her talents help to entertain at her events.

We combine a mixture of secret ingredients with a Port Wine and reduce it over heat for 3 to 6 hours to get a desired flavor. We will take the time out of your prep work, just buy a bottle! Your friends will be impressed!

For best results, pour desired amount of sauce into a sauce pan. Put on high heat and bring to a roaring boil. Let bubbles subside and serve.
